  • Sieve the flour into a large bowl
  • Add the cold butter
  • Initially coat the butter cubes in flour
  • Rub in the butter to the flour using your finger tips
  • Lift high to incorporate air
  • Shake the bowl to bring the large lumps to the top
  • Continue until the mixture resembles fine bread crumbs
