Courgette and Seed Muffins Ingredients

250 grams Plain Wholemeal Flour (Allinson) Plain Wholemeal Flour (Allinson)
2 tsp Baking Powder
1 tsp Mixed Spice
200 ml Milk Milk
2 Free Range Eggs Free Range Eggs
4 tbsp Vegetable Oil
4 tbsp Honey clear
150 grams Cougettes shredded
100 grams Mixed Seeds pumkin,sesame,sunflower

How to make Courgette and Seed Muffins

  1. Pre heat the oven to 180°C and line a muffin tray with paper liners. method tip
  2. Mix the dry ingredients and then add them to all the liquid ingredients and mix until the mixture is nice and smooth. Finally fold in the courgette without over mixing.
  3. Spoon the mixture in the cases and cover with the mixed seeds. Bake for 25 minutes or til a skewer come out clean. Leave to cool for 5min in the tray and turn out on a cooling rack . method tip
  4. I like eating mind with a drizzle of clear honey and Greek yoghurt.

"I made these for Sunday breakfast for my grandsons.They wouldn't normally have anything to do with a courgette, but they ate these, although the younger one wasn't too sure about the seeds on top. We loved them, and I'll certainly make them again.Great texture and flavour."
