Poor Knights of Windsor Ingredients

5 Free Range Eggs Free Range Eggs
400 ml Milk Whole Milk
2 tsp Vanilla Extract (Nielsen-Massey) Vanilla Extract (Nielsen-Massey)
80 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
1 tsp Cinnamon Ground
1 tbsp Cointreau
30 grams Butter Unsalted
6 Allinsons Pumpkin & Sunflower Seed Bread Slices (can make 6-8)

How to make Poor Knights of Windsor

  1. Whisk the eggs, milk, vanilla, caster sugar, cinnamon & Cointreau in a shallow bowl. method tip
  2. Cut each slice of bread into triangles.
  3. Soak the bread in the egg mixture for about 30 seconds then cook on a hot buttered griddle pan until cooked through.
  4. The bread should be crisp on the outside and soft and gooey on the inside. Repeat this for all of the bread.
  5. To serve, drizzle with golden syrup and a dusting of icing sugar.
  6. For a slightly healthier version serve with mixed berries!
