Low Calorie Tropical Cheesecake Ingredients

4 Diet Range Biscuits (e.g Weight watchers choc chip cookies)
25 grams 25g low fat spread, melted
2 Free Range Eggs beaten Free Range Eggs
250 grams Quark tub
2 tsp Half Spoon Granulated Sugar (Silver Spoon) Half Spoon Granulated Sugar (Silver Spoon)
3 Passion Fruit
1 zest of a lime

For the topping:

50 grams ready cubed fresh pineapple
50 grams ready prepared mango chunks
2.50 tbsp Crème Fraîche low fat

How to make Low Calorie Tropical Cheesecake

  1. Lightly grease 2 chef rings and place on a parchment lined baking sheet.
  2. Place the biscuits in a food processor and process until the become crumbs. You could also put the biscuits into plastic bags and beat with a rolling pin. method tip
  3. Mix the crumbs with the melted low fat spread. Spoon into the chef rings and press down with the back of a spoon. Chill while making the filling.
  4. Preheat the oven to 170°C/fan oven 150°C, 325°F/Gas 3 method tip
  5. Spoon the quark into a large bowl and add the eggs and sugar. Beat until smooth. Add the pulp from two of the passion fruits and the lime zest and fold in gently.
  6. Spoon the mixture into the rings and level off with a palette knife.
  7. Bake the cheesecakes in the oven for 20 minutes or until set but still slightly wobbly in the middle. Leave to cool completely.
  8. Slice the pineapple and mango chunks. When ready to serve, run a damp palette knife round the inside of the ring and ease the cheesecake out of the ring. Pile the mango and passion fruit on top of the cheesecake and drizzle with the passion fruit pulp. Serve with low fat crème friache.
  9. Tip: Top the cheesecakes with fresh berries such as raspberries, strawberries and blueberries. Or hope about sharp pureed apple or rhubarb.
