Eric Lanlard's Tiramisu Cupcakes Ingredients

50 grams Butter unsalted
4 Free Range Eggs large Free Range Eggs
125 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
125 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
1 tbsp level tbsp instant espresso granules dissolved in 2tsp boiling water
1 tsp Baking Powder

Additional Ingredients

For the frosting:

500 grams Mascarpone
2 tbsp Marsala
250 grams Golden Icing Sugar (Billington's) sifted Golden Icing Sugar (Billington's)
Cocoa powder and choc coffee beans to decorate

To decorate:

Cocoa powder to dust
Chocolate coffee beans

How to make Eric Lanlard's Tiramisu Cupcakes

  1. Preheat the oven to 180°C and line the tin with paper cases. method tip
  2. Place the butter into a bowl and melt in the microwave or a bain marie, then allow to cool a little.
  3. Meanwhile, place the eggs and sugar into a bowl and with a freestanding mixer whisk until pale and creamy. The mixture should double in volume and this will take a few minutes. Once whisked, fold half the flour into the mixture. method tip
  4. Mix coffee mixture into the butter and pour half into you mixture. Add the remaining flour, then the rest of the coffee and butter. Gradually fold in.
  5. Divide the mixture between the cups and bake for 25min until risen or when a skewer comes out clean. Leave to cool for 5 min and turn out on a cooling rack. method tip
  6. To make the frosting whisk the mascarpone with the golden icing sugar then add the marsala. Pipe on top of each cupcake and give a generous dusting of cocoa powder. Finish by placing a few chocolate coffee beans on top. method tip

"made these had to buy ingredient which ended up being expencive but was very delighted with the outcome certainly on my current favourite list, will be making them again soon.as i still have a lot of ingredients left not a problem"
